About this place
Add extra noodles, then change the flavour with the pickled mustard greens and red pickled ginger on the table. That familiar way of enjoying tonkotsu ramen is an option at Butami. One diner who ordered the black chashu ramen described the pork as softer than expected and enjoyed it with thin noodles, adding mustard greens and red pickled ginger after ordering extra noodles. The menu lists white tonkotsu ramen at ¥780, with the red and black versions each priced at ¥800. Chashu ramen and special versions with egg and nori are also available.
Noodle firmness ranges from konaotoshi—barely cooked—to soft, and the menu gives the boiling time for each option. One diner said they enjoyed thin noodles in their tonkotsu ramen through an extra serving; another ordered the seafood tonkotsu dipping ramen with chilled noodles in a large portion and liked its richness. The menu also lists seafood dipping ramen, spicy dipping ramen and a seafood dipping ramen special, which is marked as including a free large portion.
Garlic fried rice is another dish to consider beyond the ramen. One diner described it as moist fried rice topped with garlic powder, with the flavour opening up when mixed together. They also mentioned eating it with the spicy mustard greens from the table—a different way to add a little kick from the ramen customisation. The menu includes fried rice and gyoza sets available with a ramen order, making it easy to add a side while keeping the noodles centre stage.
For a few bites before the noodles, snacks include smashed cucumber, kimchi and edamame. Drinks range from draft beer and Hoppy to lemon sour, making the restaurant an option for lunch or a late meal.
Tonkotsu Ramen Butami in Nakano-Shimbashi is open daily from 11:00 until 1:00 the following day. Solo dining is possible, but the restaurant does not accept reservations.
